Unprocessed barley shochu is aged in a virgin oak barrel for 2 years. The contents of the barrel are then removed. The shochu seasoned casks are then filled with new barley shochu which will rest in their wooden homes for 8 years.
Koji fermentation imparts a distinctively smooth taste and texture unique to this liqueur. Asakura’s taste is a hybrid of Shochu x Speyside – the epitome of East meets West.
