Barley shochu is aged in shochu seasoned oak for 6 years. The contents of a seasoned shochu barrel are transferred to an ex Manzanilla and ex Oloroso casks and aged for a further one year. After one year has passed, the contents from the ex Manzanilla and ex Oloroso casks are blended and bottled.
